Like its namesake suggests, this tea is sweet with a lot of character. A 2020 spring harvest green tea from Hakalau on the Big Island at 900 feet elevation, this tea has an immediate sweet aroma. Notes of crepe pancake and syrup follow. “Honey Badger” has been roasted for nuttiness and goes well with mild-flavored dishes like salmon and also salty snacks like nori. In cooler water temperatures, 160 degrees as opposed to the 180 degrees generally suggested for green teas, a floral palate arises. Treehouse Tea has committed to utilizing only Hawaiʻi-grown teas and Botanicals in their products. From the volcanic soil of Hakalau, “Honey Badger” is a cup of tea to behold.

By focusing on a product such as tea which is usually imported to the islands, and instead creating a market for Hawaiʻi-grown teas within the islands and beyond, Treehouse Teas is contributing to Hawaiʻi’s food sovereignty. With the original mission of bringing more quality teas to Hawaiʻi’s restaurants, Brittnee has now turned her focus towards a commitment to using 100% Hawaiʻi-grown teas and Botanicals in her products. She works with tea growers in Hawaiʻi to compose loose-leaf teas of all varieties. By doing so, she is further carving out a space for Hawaiʻi’s tea-growers on the map.
