Vintage Vinegar | Raw Pineapple Vinegar
The gut-friendly benefits of raw vinegar and the fat-digesting enzyme bromelain, found only in pineapples, combine forces in Vintage Vinegars’ Raw Pineapple Vinegar. This tropical fruit vinegar can be used for at-home pickling (pickled sweet onions are a favorite) or as a dressing, sauce or marinade. Bromelain has the added benefit of being an excellent meat tenderizer. This vinegar is steel cast and made in small batches on Oʻahu. Vintage Vinegars utilizes the excess from a commercial pineapple operation and continues to seek out new ways to make use of what would have been discarded.
Each year, 108 billion pounds of food is wasted in the U.S. while simultaneously, 40 million Americans struggle with hunger. In each step of the process to make food products, there is waste. Vintage Vinegars is contributing to the solution by seeking new ways to utilize the excess of existing operations to create products fit for retail. They continue to experiment with new byproducts such as cacao nectar and local “B” grade mangoes and surplus from markets.
Meet the Makers
In 2016, Ian and Uluwehi learned of the homeopathic benefits of fermented food as well as the enzyme bromelain, found in pineapples. With the mission of adding value through conversion, the two began following an excess sourcing model and started Vintage Vinegars. Raw Pineapple Vinegar is only the beginning as the two continue to seek out new ways to utilize food surplus. These vinegars are processed and produced entirely on the island of Oʻahu.
